Happy Chinese New Year!

It was pretty busy today. Most of Maji customers actually like Maji tatakis. Almost ran out of everything that we prepared for today.
By the way, I just got off www.dinehere.ca website, and I saw customers have positive comments of our food. That totally made my day. We are a good team.
Just wanna thank all our customers for supporting us. Thank you for understanding that occasional delays may occur sometimes. If you have any comments or questions, please don't hesitate to leave it on the website, either here or dinehere.ca. We will gladly hear from you, because you all are important to us. All I want to do right now is to please my customers as much as I can. This Friday, Maji has a reservation of 30 people together. If possible, try to avoid the Friday night. What a busy night !!!!

There was a reservation for eight people tonight. We predicted that it was going to be a busy night, which made everybody pretty nervous when the night came. When the table came, it was okay! And we thought "That's it for tonight!". Around 6:30, a phone call came in. TWENTY PEOPLE reservation at 7 o'clock !!!!!!!!!! Oh my, oh my. We weren't really ready for that large of crowd. So I made a choice of making a phone call to Tom, the owner. "Rescue us, Tom!!" sigh. Lucky us, two of Maji hostesses were in the party of twenty, Haney and Sandy. sigh. Then we made another choice of shutting Maji down, again. sigh. For customers whom were about to coming during that half hour, we are really sorry that we miss the chance to serve you. Because we value our service and food quality the most, that is why we would never let our customers dine in a situation we can't handle. Even though it may upset the customers, from the chef's point of view, I wouldn't allow our service nor quality to fall under our standard while they dine in. I try not to. The night was over. Today we definitely learn from the situation. Hope we don't disppoint our customers again. I extremely appreciate Tom, Haney and Sandy. Thank you for rescuing us! Thank you, Claire and Alric. Always stay by my side. Finally, thanks to all the customers for such tolerance. Last day til' my dayoff. Yay! Going off to sleep.

New colors~

Today I was really pleased that some customers told our staff that they are here for the second times. That is why I have started to play around with my dishes. Took some times to look at cooking books and discovered that color is one essential factor in a nice dish. I posted a picture ( Spicy Tuna Sashimi ) that I found very satisfying to the eyes. Well, hopefully, I will be able to keep the standards that those are the colors I will present in my dishes. And hopefully, my customers will be happy of my creations.

Energy Boost~

It has been a bit slow after X'mas. The Snow. The Rain. The Winter. And the Xmas Debt!! Ha ha!! In the morning, there were a few of customers came in, but there was one customer coming in around 3 o'clock. I always welcome them no matter what time they come in. But today, there was some reason that I was not able to open the door for the customer, I felt so so sorry. Next time, I promise I will do my best to welcome no matter what reason stops me. Tonight, it was such an energy boost for me. Some regulars came in whom I am really good friends with. And some customers compliment my dishes that I just can't stop smiling about. I just want the customers know that making them happy is my top priority, a chef's responsibility.
Right now, Tom and I are working on our new menu. We just want to make it perfect for our Maji customers. I sincerely apologize for the delay.
I took some more pictures of Maji dishes today, and some customers too. Enjoy the pictures.
Going off to relax.

Maji Atmosphere~

Today I brought my camera to Maji. I want to show people what Maji Sushi is like inside, my staffs and some of my dishes. The atmosphere is really nice, the owner used a darker tone for the overall pirate theme, which I like a lot. The boothes basically form a pirate ship that takes up the whole wall. The lightings were designed to be izakaya-style which give the whole restaurant the mystery factor. I really like it since there aren't many restaurants like this within the Tri-cities. As you can see, there are my favourite staff- Claire, Alrick, Stella, Jenny and Haney. Maji's regulars may see them a lot. Then there are some of my dishes that I took right before I sent it out. Hope you guys enjoy the pictures, and if you have time, come try us out!! You will have a wonderful time dining with us.

Maji and I

On December 16th, 2008, I have entered a place that I have never thought myself in, the world of Maji Sushi. Somehow, I just feel like I belong to here. I was meant to be here.
The owner, Tom, was generous enough to offer me the position of head chef/manager of Maji. What more can a chef ask for when there is a place where you could express your own passion to? Tom and I talked for a long time. We both decided that we would lead Maji Sushi into a different direction in the future, a direction of never turning back. That was when we agreed to launch a new manu for Maji Sushi. A manu that I have chosen to put my heart, my strength, my knowledge, and finally, my soul into. It is my dream coming true. After a showdown, the dishes I showed Tom were my precious creations, my babies. I've had them for years, but I never had the opportunities to present those to the food lovers. Tom gave me this opportunity, and I am forever grateful. The manu isn't finished yet, but everyday, when customers come in and order something on the manu, I eagerly show them what my creations are. When they are happy and complimenting, that was the most beautiful music I could hear in the world. (of course, other than my sons' cryings) When the customers are not happy, I would give 100% of my heart to improve what I can do to make them happy. That, to me, is what a professional chef would have to do to step up a level.
I understand that changing the manu may offend some regular customers, because I am taking away something they have loved. But I promise that I would try my best to give Maji, to give Tom what I have inside of me, to bring out the best of Maji Sushi.
